2 T. butter, melted
2 T. milk
1 T chopped fresh chives or parsley
1/2 tsp. salt
1/2 tsp. garlic powder
2 c. Corn Flakes, crushed (1 c.)
3 T. chopped fresh parsley
1/2 tsp. paprika
6 boneless skinless chicken breasts (about 1 3/4 lb)
2 T. butter, melted
1. Heat oven to 425º. Spray 9x13" pan with cooking spray. In shallow dish, mix 2 T. butter, milk, chives, salt and garlic powder.
2. In another shallow dish, mix crusted cereal, parsley, and paprika. Dip chicken into milk mixture, then coat lightly and evenly with cereal mixture. Place in pan. Drizzle with 2 T. butter.
3. Bake uncovered 20-25 min or until chicken is no longer pink when centers of thickest pieces are cut.
Tip:
Do ahead!
Coat the chicken breasts with the crumbs the night before and then bake the next day when you get home.

Chocolate Zucchini Cake
1/2 c. butter (don't substitute)
1/2 c. oil
1 3/4 c. sugar
2 eggs
1 tsp. soda
1/2 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
1/2 c. buttermilk (or 1/2 c. milk with 1/2 tsp. lemon juice mixed in and let sit for a few minutes)
2.5 c. flour
5 Tbsp. cocoa
2 c. shredded zucchini
1 c. chocolate chips
1 c. white chocolate chips
Cream together the butter, oil, sugar and eggs. Mix in the soda, cinnamon and salt. Then add the vanilla, buttermilk, flour and cocoa. Stir in the shredded zucchini last. Pour into a greased and floured 9x13" pan. Top with chocolate and white chips. Bake at 325º for 45 minutes, or until a toothpick comes out clean (minus the melted chips on top).

Parmesan Turkey Pasta Salad
6 servings of bowtie pasta
Turkey breast - cut in pieces and cooked
4 servings grated parmesan cheese
3 Tbsp milk
1 cup fresh basil leaves
2 cups creamy ceasar dressing
Or something like these measurements. I was just guessing at the amounts. Mix all together and enjoy!!! Soooo tasty!!!!!

Sweet and Sour Chicken
Sweet and Sour Chicken
Ingredients
- 4 chicken breasts
- 2 eggs, beaten
- 4-6 T. flour or cornstarch
- oil
- 6 T. sugar
- 6 T. ketchup
- 6 T. vinegar
- 4 T. water
- 4 T. pineapple juice (from can of tidbits)
- 5 tsp. cornstarch
- 1 can pineapple tidbits, drained (save 4 T.)
- 2 green peppers
- 1/2 onion
Directions
- Cut up chicken into bite-sized pieces. Dip chicken in egg, then in flour/cornstarch. Fry in oil. Drain on paper towels.
- Heat 2-3 T. oil, stirfry cut up green peppers, onion, and carrots until desired softness. Add pineapple tidbits.
- Mix sugar, vinegar, ketchup, water, pineapple juice, cornstarch, and salt. Add to vegetables. Heat until thick. Add chicken.
- Serve over rice.
Notes
- This makes a lot! You can leave out any of the vegetables or use less of them. I'd still use the same amount of sauce even if you reduce the amount of chiken or vegetables.
- The amount of chicken I use varies. Sometimes I buy a package of chicken tenderloins and cut those up. Sometimes I just use 2 chicken breasts or whatever I have.
- I tried an easier way to do the chicken that I like. Cut up 2 lbs of chicken (I did 2 chicken breasts) and put in bowl. Add 2 tsp. cornstarch, 1 beaten egg and 1 tsp. salt. Mix. Let stand at room temperature for 15 mins or in fridge for up to overnight. Then fry in skillet in olive oil for about 1 minute per side (or until done in center).

Ratatouille
Ratatouille
Ingredients
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 teaspoons dried parsley
- 1 eggplant, cut into 1/2 inch cubes
- salt to taste
- 1 cup grated Parmesan cheese
- 2 zucchini, sliced
- 1 large onion, sliced into rings
- 2 cups sliced fresh mushrooms
- 1 green bell pepper, sliced
- 2 large tomatoes, chopped
Directions
- Preheat oven to 350 degrees F (175 degrees C). Coat bottom and sides of a 2 1/2 quart casserole dish with 1 tablespoon olive oil. (It may seem too large, but it will cook down.)
- Heat remaining 1 tablespoon olive oil in a medium skillet over medium heat. Saute garlic until lightly browned. Mix in parsley and eggplant. Saute until eggplant is soft, about 10 minutes. Season with salt to taste.
- Spread eggplant mixture evenly across bottom of prepared casserole dish. Sprinkle with a few tablespoons of Parmesan cheese. Spread zucchini in an even layer over top. Lightly salt and sprinkle with a little more cheese. Continue layering in this fashion, with onion, mushrooms, bell pepper, and tomatoes, covering each layer with a sprinkling of salt and cheese.
- Bake in preheated oven for 45 minutes.

1/2 c. brown sugar
1.5 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1.5 c. chocolate chips
1 egg
1 tsp. vanilla
Cream butter and sugars very well (until fluffy)
Add egg and vanilla and mix.
Add dry ingredients and mix well.
Stir in chocolate chips.
Shape into 1" balls and place 2" apart on ungreased baking sheet.
Bake at 350 for 10-12 mins or until tops are just beginning to turn golden.

James' Fajita Seasoning
A sweet fajita seasoning
Ingredients
- 1/3 cup lime juice (or any other citrus juice)
- 1 T. cumin
- 2-3 cloves garlic
- dash of cayenne pepper
- 1/2 tsp. crushed red pepper
- 2 T. coconut oil (or olive, or vegetable, if you must)
- 1 tsp. salt
- 2 T. apple cider vinegar
- 1/4 c. brown sugar
- fresh cilantro to taste (optional)
Directions
- Mix all ingredients, pour over chicken and simmer until chicken is cooked.
Notes
- You may want to taste it beforehand. "You want it tart enough that your jaw tingles a bit but not so much that you get a sustained pucker. A lot of the tartness goes away with cooking so a bit of a bite is good"
- "I would cook the peppers and onions separately from the chicken. Maybe caramalize the onions a bit"
- "If you [marinade the chicken] make sure the marinade is strong. The citrus and vinegar help break the meat down but the water in the chicken dilutes it. I usually just cut up the chicken and throw it in the skillet pour the sauce on and cook. You don't want the chicken to be swimming. If possible you want the sauce to cook down and maybe even caramelize a bit on the chicken. That balance is really hard to get just right though. I would prefer a bit too much sauce to not quite enough."
- This is enough sauce for 3-4 large chicken breasts cut into small chunks. Perhaps more.
- This sauce is also good with chicken and shrimp.
- If you don't like spicy sauces, leave out the cayenne and red pepper. You'll get a nice sweet seasoning.
